David Petersen has devised a terrifc freight operations modeling system for use with the Trainz simulator. You can read his article "Modeling Prototype Freight Operations in Trainz Using the Car Movement and Traffic Management System" at the VR Reading Room.
In the article, David uses my Hither & Yon switching layout as a demo. This layout has hither to not been made public. It's now available at the VR Downloads page in the Trainz > TRS2006 section. I haven't written it up yet, but the included readme file explains how to use it.
